BURTON, MI — The El Lucha Taco food truck rolls with four generations of recipes used to create homemade Mexican cuisine.

Adam Mireles’ passion and skills for cooking dates back to his great-grandparents, who would often sell tacos in the 1950′s at Flint’s Chevy in the Hole.

“My great-grandmother and my great-grandfather used to sell tacos on the assembly line and they opened up one of the first restaurants in Flint,” said Mireles, owner of El Lucha Taco food truck.

The food truck features steak, ground beef, grilled chicken and veggie tacos as well as quesadillas, tamales and giant burritos.

Customers can get a set of three beef tacos with flour tortillas for $9 or three ground beef tacos for $8. Steak tacos cost $10 for three servings.

“My burritos are huge,” said Mireles, with a tinge of excitement in his voice. “I would say they’re the size of a newborn baby.”

The burritos are stuffed with beans, rice, choice of meat, cheese, lettuce, tomato, sour cream and salsa. After the burrito is packed with ingredients it’s encrusted with cheese and Dorito chips.

Burritos range from $10 – $15, depending on what toppings are added.

Another customer favorite on the menu is Mireles’ version of the walking taco, which he calls a walking fiesta. The creation comes in a box with salsa, sour cream, jalapenos, sauce, cheese, meat, lettuce and tomato.

Mireles, who started his own business in the food industry in 2016, grew up in the kitchen, being raised by his great-grandparents and taking in all the techniques his great-grandmother used to cook up meals for the family.

The Flint native, 36, started his business with a hot dog cart and eventually obtained his food truck and focused more on recipes he was taught when he was younger.

“Everything I do is homemade. The guac – when you order guac, I do it fresh on site. Salsa – I make my salsa that morning and I’m rolling with four generations of recipes, my great-grandmother’s recipes,” Mireles said. “My great-grandparents were the biggest influence in me doing food, cooking food. They taught me everything, Spanish, food, everything.”

Mireles’ great-grandfather is 98. He still cuts his own grass, does his own shopping, cooks and is “sharp as a knife,” the grandson said.

On Saturdays, you can catch the food truck from noon to 10:30 p.m. parked at Redline Brewing Company, 5470 Lapeer Road, in Burton.

The food truck also serves at local events such as the Swartz Creek Farmers’ Market and caters for private or other events. To learn more, visit here.
