TikToker reveals the ‘perfect’ temperature to avoid food sticking to stainless steel pans

A chef on TikTok is revealing the secret way to know when a stainless steel pan is at the “perfect” temperature for cooking.
The post, shared by the cookware company Misen (@misenkitchen), shows how to deal with a common cooking woe — food sticking to the bottom of a hot stainless steel pan.
It’s just one of the seemingly millions of cooking tips to go viral on TikTok. In recent weeks, users have shared tricks for how to quickly cut a bell pepper, how to fix overly salty food and the “real way” to open an English muffin.
Misen’s hack shows how to fry eggs on a stainless steel pan, although the trick works for any potentially sticky foods. The secret, it turns out, is finding the right temperature.
As the chef explained in the video, you can use a few drops of water to test the hack. First, place the stainless steel pan over medium heat, then wait for one to two minutes.
Next, pour a tiny bit of water over the pan, and watch what happens. If the water fizzles or does nothing, it’s not hot enough. But, if it slides around the pan in a single glob, that means you’ve reached the right temperature.
Of course, you should still use oil or fat when cooking, regardless of Misen’s hack. As the chef showed, this combination will allow the food to slide easily around the pan without sticking.
Some TikTok users were critical of the hack, claiming the chef in the video used “too much” oil. However, many commenters pushed back against that claim and said the trick was extremely helpful.
“Y’all it’s not the oil that made it nonstick. Trust me,” one user wrote. “I have stainless steel and even with a ton of oil it’ll still stick if the heat isn’t right.”
“Whoever said this is too much oil doesn’t cook,” another joked.
“Wow I’m impressed,” another added.
